This is the recipe for my all time favorite peanut butter cookies. It comes straight from my mom's kitchen, and it's foolproof. I have never made a batch of these that came out tasting anything less than excellent. These cookies stay soft and chewy, and the dough can easily be made in advance and frozen.
Mom's Peanut Butter Cookies
(makes 3 dozen)
1/2 cup shortening1/2 cup smooth peanut butter
1 cup sugar
1/2 cup brown sugar, packed
1 1/2 cups self rising flour
1. Preheat oven to 325 degrees.
2. In a large mixing bowl, cream together all ingredients except flour. Add the flour to the mixture 1/2 cup at a time.
3. Spoon dough by the heaping teaspoonful onto a greased baking sheet, keeping cookies 2 inches apart.
4. Roll each mound of dough into a ball, and press each gently with a fork both horizontally and vertically to make the indented, checked pattern on top.5. Bake for 10-12 minutes. Cool on cookie sheet 3-5 minutes before transferring to a serving dish.
