Foolproof Peanut Butter Cookies

This is the recipe for my all time favorite peanut butter cookies.  It comes straight from my mom's kitchen, and it's foolproof.  I have never made a batch of these that came out tasting anything less than excellent.  These cookies stay soft and chewy, and the dough can easily be made in advance and frozen.

Mom's Peanut Butter Cookies
(makes 3 dozen)

1/2 cup shortening
1/2 cup smooth peanut butter
1 cup sugar
1/2 cup brown sugar, packed
2 eggs
1 1/2 cups self rising flour

1.  Preheat oven to 325 degrees.
2.  In a large mixing bowl, cream together all ingredients except flour.  Add the flour to the mixture 1/2 cup at a time.
3.  Spoon dough by the heaping teaspoonful onto a greased baking sheet, keeping cookies 2 inches apart. 
4.  Roll each mound of dough into a ball, and press each gently with a fork both horizontally and vertically to make the indented, checked pattern on top. 
5.  Bake for 10-12 minutes.  Cool on cookie sheet 3-5 minutes before transferring to a serving dish.


  1. i used to try making peanut butter cookies all the time, and they always came out salty. so i gave up. years later, i think i need to try this one and see if i can break the streak of the salty cookies.

  3. so i made these today, and they were delicious! i was so excited to have finally made good peanut butter cookies. i didn't have shortening so i used butter, and they were still great. there are only two left (out of two and a half dozens) and i think they only survived because my husband just fell asleep on the couch. thanks so much for the recipe!
